Homemade Mac and Cheese with Local Milk and Organic Cheese
- 8 oz pasta, like cavatappi or rotini
- 3 TB butter
- 1.5 TB diced shallot
- 2 TB flour
- 2 tsp honey mustard
- 1 tsp Salt
- ⅛ tsp freshly cracked pepper
- 1.5 cups whole milk
- 1.5 cups shredded cheese (a combination of Smoked Gouda and Garlic Gouda)
- Dash of smoked paprika
Cook pasta according to the package. Meanwhile, in a 10-inch skillet, melt butter over medium heat. Add shallot and cook until translucent. Whisk in flour, mustard and salt. Cook for 2 to 3 minutes, or until sauce begins to bubble, stirring constantly.
Slowly add milk. Continue whisking until it gently bubbles and thickens. Remove from heat; stir in cheeses, smoked paprika and pepper. Whisk until smooth. Fold the cooked, drained pasta into the cheese sauce.
