Homemade Mac and Cheese with Local Milk and Organic Cheese

Mac and cheese, the go-to comfort food that is easy to make with little prep time needed. Take it up a notch by using Hastings Creamery whole milk and our organic artisan Comstock Cheese!

  • 8 oz  pasta, like cavatappi or rotini
  • 3 TB butter
  • 1.5 TB diced shallot
  • 2 TB flour
  • 2 tsp honey mustard
  • 1 tsp Salt
  • ⅛ tsp freshly cracked pepper
  • 1.5 cups whole milk
  • 1.5 cups shredded cheese (a combination of Smoked Gouda and Garlic Gouda)
  • Dash of smoked paprika


Cook pasta according to the package. Meanwhile, in a 10-inch skillet, melt butter over medium heat. Add shallot and cook until translucent. Whisk in flour, mustard and salt. Cook for 2 to 3 minutes, or until sauce begins to bubble, stirring constantly.

Slowly add milk. Continue whisking until it gently bubbles and thickens. Remove from heat; stir in cheeses, smoked paprika and pepper. Whisk until smooth. Fold the cooked, drained pasta into the cheese sauce.
